Jamaican Easter Bun Recipe

This is a tasty Jamaican recipe for the easter season, we wanted to let people get this recipe because it was in demand. Look out for our Thanksgiving recipes for November this year. We are rolling out some top Jamaican recipes for the thanksgiving holidays in the US.
INGREDIENTS
3 cups of sifted flour
¾ cup cows milk
1 tbsp low fat butter
3 tsp baking powder
1 tsp grated nutmeg
1 tsp cinnamon spice
2 cups white sugar
1 beaten egg
1 cup fresh raisins
½ tsp lime juice
1 Pinch of salt

PREPARATION
Grease a baking tin and line it with grease paper.
Preheat your oven to at least 320 degrees F. about 15 minutes.
Mix egg, sugar, butter and milk and turn into a liquid batter
Add all dry ingredients and beat in a cake mixer until smooth.
Add the fresh raisins to the mix and then pour into the lined and greased tin.
Bake the mix for approximately 1 hour.

Easter Bun Glaze
½ cup brown sugar
½ cup water
Boil water and sugar until thick
Spread the glaze on the Easter bun and return to oven for an additional 8 minutes.

How To Make The Best Jamaican Oxtail Recipes

A great tasting Jamaican recipe that’s even better when mixed with butter beans. This is a recipe taken directly from our archives.

2 pounds chopped oxtails
10 cups of water
1 onion finely diced
1 green onion and ripe pepper diced
1 teaspoon of paprika
1 tablespoon salt
1 tablespoon soy sauce
1 can of Jamaican butter beans
3 cloves of garlic diced finely
4 thyme stalks with shredded leaves
5 pimento seeds crushed finely
½tablespoon of vinegar

Mix water and vinegar and wash the oxtails to remove any raw smells then place the oxtail meat in a pressure cooker with the soy sauce and the paprika with no salt. Add about 3-4 cups of the water and pressure cook the oxtail until the cooker reaches maximum levels then cook for about 3 more minutes then allow the pressure cooker to cool. Next in a medium sized sauce pan add seasonings with a tablespoon of oil and sauté for about 1 ½ minutes. Next add the Oxtail and the butter beans, then cover and cook down for about 3-5 minutes on a low stove. Next Remove and then serve. Don’t serve this recipe with a lot of gravy, it does not work well.
