Special Jamaican Honey Cake Recipe


This is one of Doreen’s favorites, try this great cake recipe today.
ingredients
1 pack Yeast
½ cup water
1 cup margarine
2 tsp salt
1 cup sugar
4 eggs
2 tbsp Lemon juice
½ tsp ground nutmeg
2 cup milk
10 cup flour
¼ cup margarine
¼ cup powdered sugar
1 egg white
2 tbsp honey
2 cups powdered sugar
1 cup boiling water
1 tsp Vanilla

preparation
Soften yeast in water. cream butter, salt and sugar.
Add slightly beaten eggs, lemon juice, spice, milk and soaked yeast.
Stir in flour, keeping dough softer than for loaf bread.
Knead on a lightly floured pastry cloth.
Place in a greased bowl and brush top lightly with fat.
Cover and let rise in a warm place until doubled in bulk.
Shape into a long roll about 1” in diameter. coil loosely into greased pan.
Mix ingredients for honey topping and brush on dough.
Let it rise until doubled in bulk.
Bake at 350~F for 30 min.
Cool slightly, dribble with icing made by adding boiling water 1 tbsp at a time to powdered sugar.
Add just enough water so that the icing flows freely from a spoon.
Add vanilla.

Blended Fruit Rum Cake - Jamaican Rum Cake Recipe


A great rum cake with fruits and coconut to blend
ingredients
½ 7-up dough recipe
1 ½ cup pineapple preserves
1 ½ cup apple preserves
1 cup flaked coconut
3 tbsp Appleton white rum

preparation
Pre-heat oven 375 degrees. Press dough into greased 9x13” cake pan.
Spread preserves evenly over dough. Sprinkle coconut on top.
Cover; let rise in warm place until double, about 30 minutes.
Bake at 375 degrees for 25-30 minutes.
If coconut gets too brown, cover loosely with foil last 5-10 minutes of baking.
Cool 10 minutes in pan, then remove from pan.
Serve warm or cold.

Cocktail beef patty recipe - Jamaican Recipes

A special beef patty recipe that is almost synonymous with the Jamaican recipe.

ingredients
6 Jamaican patty crusts
1½ cups ground beef
1 tsp salt
¼ tsp dried thyme leaves
1 lg tomato chopped
½ tbsp scotch bonnet pepper diced
2 stalk escallion chopped
1 lg onion finely chopped
2 tbsp soy sauce
¼ tsp sugar
½ tsp allspice
preparation
Sauté escallion, onions, thyme, pepper and chopped tomato in frying pan.
Add beef mince in frying pan and fry until minced is cooked.
Add soy sauce, sugar, salt and allspice.
Ensure that the beef is wet when placing it on the patty crust.
Place at least 3 tablespoons of filling on each circle then fold and crimp with a fork the corners.
Brush a small amount of oil on each patty.
Place in the oven then bake for approximately 45 minutes at 375 Degrees.

Kingston CHICKEN CANAPES
A cold recipe but loved as a great appetizer

INGREDIENTS
½ cup creamed cheese
¼ cup sour cream
2 cups cubed chicken breast
½ tsp allspice
¼ tsp onion powder
¼ tsp scotch bonnet pepper
PREPARATION
1. Fry the chicken cubes in a large frying pan for 15 to 20 minutes.
2.
Remove the prepared cubes and drain any remaining oil from them.
3.
Mix cheese, sour cream and dry spices together.
4.
Place the chicken cubes in the mixture and then keep chilled.
5.
Just before serving, spread on butter
6.
Serve with crackers.
