INGREDIENTS
½ pound chicken
½ tsp Jamaican Appleton V/X rum
1½ tsps soy sauce
½ tsp jerk sauce
½ tsp June plum sauce
½ tsp ketchup
¼ tsp salt
¼ tsp sesame oil
3 stalks escallions diced
 PREPARATION
1. Cut chicken meat into thin slices.
2.
Cut 6-inch sheets of aluminum foil.
3.
Mix chicken meat with all ingredients.
4.
Place slices of chicken on each sheet of foil.
5.
Wrap to form sealed triangular packets.
6.
Heat oil in frying pan and deep fry the foil-wrapped packets over high heat for about 15 minutes or until the chicken is prepared.
Remove and drain.

Doreen’s favorite chicken nugget recipe with two new ingredients.
INGREDIENTS
1 stalk escallion minced
1 tbsp onion powder
1 tbsp garlic powder
1tbsp all spice (pimento)
¼ tsp paprika
½ cup dry bread crumbs
1 tbsp diced scotch bonnet pepper
½ tsp cinnamon
¼ cup dried thyme leaves
¼ tsp scotch bonnet pepper minced
2 lb boneless chicken breasts

¼ cup vegetable oil
PREPARATION
1. In large bowl, combine all dry ingredients with the bread crumbs, thyme and pepper.
2.
Dip chicken in bread crumb mixture, coating well. In large skillet, heat ½ inch vegetable oil and cook chicken over medium heat turning once, until done; drain on paper towels.

A great blend of ginger and sugar with your Jerk chicken recipe

INGREDIENTS
10 chicken breasts without skin
½ cup vegetable oil
2 tsp garlic powder
2 tsps onion salt
2 tsps basil
2 tsps thyme
2 tsps vegetable seasoning
2 tsps crushed red pepper
2 tsps cumin
2 tsps coriander
2 tsps ginger
2 tsps black pepper
1 tsp cinnamon
1 tsp ground cloves
1 tsp allspice
1 tsp cayenne
1 tsp salt
¼ cup sugar
1 onion diced
1 green pepper diced

PREPARATION

Mix onion, green pepper, oil, sugar and seasonings in bowl with chicken.

Cover and refrigerate for four hours or overnight. Grill until just done.

Accompany with salsa or any sauce of choice.

Authentic Jamaican Jerk Chicken Recipe

MONTEGO BAY STYLE JERK CHICKEN
This recipe was adopted from the jerk chicken chefs in Montego Bay men during the Jerk Chicken Festival held in February 2006.
INGREDIENTS
2 tbsp brown sugar
2 tbsp oil
2 tbsp soy sauce
1 tsp ground cinnamon
1 tsp ground thyme
½ tsp ground red pepper
2½ pounds chicken pieces
PREPARATION
1. Mix all ingredients except chicken in small bowl until well blended.
2.
Pour dressing over chicken; cover. Refrigerate 1 hour to marinate.
3.
Drain and discard dressing mixture.
4.
Place on greased grill over hot coals or on rack of broiler pan 5-7 inches from heat.
5.
Grill or broil 40-45 minutes or until cooked through, turning frequently.
