Jamaican Appetizer Recipes

A special goat meat appetizer popular across Jamaica.
ingredients
1 lb Jamaican yam
¼ tsp salt
¼ tsp black pepper
¼ tbsp dried thyme leaves
½ tbsp scotch bonnet pepper diced
2 lg green bananas boiled and chopped
½ cup chopped carrots
¼ cup chopped escallion
4½ cups water
2 lb goat head meats
2 chochos, peeled and finely chopped
preparation
1. Chop goat head meat finely and place in water.
2.
When it reaches a boil add all other ingredients to the pot.
3.
Reduce heat, cover, and simmer 45 to 55 minutes, or until yam, chocho and bananas are soft.
4.
Serve hot.

ingredients
6 Jamaican patty crusts
1½ cups peeled and de-veined shrimp
¼ tsp salt
¼ tbsp scotch bonnet pepper diced
½ stalk escallion chopped
1 tbsp curry powder
¼ tsp sugar
½ tsp allspice

preparation
1.      Sauté escallion and pepper in a frying pan.
2.
Add shrimp in frying pan and fry until shrimp is cooked.
3.
Add curry powder, sugar, salt and allspice.
4.
Continue to stir and allow to simmer until shrimp are well cooked.
5.
Ensure that the curry shrimp is wet when placing it on the patty crust.
6.
Place at least 3 tablespoons of filling on each circle then fold and crimp with a fork the corners.
7.
Brush a small amount of oil on each patty.
8.
Place in the oven then bake for approximately 45 minutes at 375 Degrees.

1 tbsp dried thyme
1 tbsp paprika
1 tsp ground red pepper
1 tsp garlic powder

PREPARATION

Place all ingredients in a blender and blend thoroughly.

Remove and place in a plastic container and refrigerate.

Jamaica Jerk Chicken Recipe

Jerk chicken prepared in true Ochi style

INGREDIENTS
2 tbsp Juice lemon
2 tbsp Juice lime
1 tbsp Dijon mustard
1 Scotch bonnet pepper diced
1 garlic finely chopped
1 pinch salt and black pepper
1 stalk escallion diced
¼ tsp dried thyme leaves
4 Chicken breast halved
PREPARATION
1. In a shallow dish or plastic bag, combine 3 tbsp water and all ingredients except chicken.
2.
Add chicken, coating well with marinade. Cover dish or seal bag; marinate in refrigerator 4 hours or overnight.
3.
Prepare outdoor grill or preheat broiler.
4.
Remove chicken from marinade; pour marinade into small saucepan and bring to a boil.
5.
Grill or broil chicken 15 to 20 minutes, turning occasionally and basting frequently with marinade.

ingredients
1½ lb boneless beef sirloin cut into strips
1 cup sweet peppers chopped
½ tbsp scotch bonnet pepper minced
¼ cup garlic chopped
¼ cup white wine (optional)
¾ tbsp ginger minced
½ tsp salt
½ tsp black pepper
½ tsp allspice
¼ tsp cinnamon powder
½ tsp Jamaican hot pepper sauce
1 tbsp margarine
1 tbsp vegetable oil
½ cup onion chopped
1 cup cooked rice
preparation
1. Place the chopped sweet pepper, scotch bonnet pepper, garlic, wine, ginger, salt, pepper, allspice, cinnamon, and hot pepper sauce in a blender on medium-high speed until smoothly blended.
2.
Heat the margarine and the oil in a frying pan over medium-high heat until hot.
3.
Add the beef and cook until meat is browned on all sides.
4.
Remove the beef set aside and keep warm.
5.
Add the onion and more sweet pepper strips to the skillet and cook until brown.
6.
Return the beef to the skillet and add the blender mixture.
7.
Heat to boiling, then reduce the heat and simmer uncovered until the beef is hot and the sauce is slightly thickened.
8.
Serve over rice.

ingredients
2 cups sour sop pulp
2 cups water
½ cup evaporated milk
½ cup condensed milk
1 tsp. vanilla
½ tsp. nutmeg

preparation

Add sour sop pulp to water in blender and liquefy.

Strain and combine with other ingredients.

Can be served chilled or over crushed ice.
